First Danish absinthe
On 1 November 2011, the Company had the pleasure of tasting the first Danish produced, distilled absinthe - Esrum Absinth - based on a Swiss recipe from 1899. Year 2011 is produced banana bread with local wormwood and also very few ingredients, including star anise, which gives a little too heavy licorice flavor - but all in all a pleasant experience.
Complexity is missing, of course, in terms of our references, but the Danish wormwood doing well and there are no unpleasant bitterness or skewed balance as you might fear from a first attempt. If you already drink pastis, this simple upgrade actually be an excellent banana bread introduction to the extra flavor notes as wormwood and hyssop add anise-licorice. The price is also quite reasonable - but that was only made 200 bottles that are sold out. The harvest is simply limited, so there will only be made more next year.

If you continue the historical studies, we want to hear from you - we're happy to find that we are wrong, and that there is actually distilled absinthe in old Dannevang - it would be wonderful.

Drip ice-cold water into absinten. The slower the better. 3-5 parts water to 1 part absinthe. For a sweeter taste, you can let the water drip over a spoon with sugar. Never fire absinten, it ruins the taste.
Absinthe is white (blanching) or green (verte). Verte is dyed with herbs after distillation. There are variants with colored flowers which may be yellowish or reddish. Absinthe with bright colors are artificial and should be avoided.
Thujone is a neurotoxin found in wormwood - and other herbs, for that matter. Do not worry about thujonindholdet in your absinthe - within permitted limits may not be toxic or make you stoned.
