Blanche with Danish suburbia mastermind - La Maison Fontaine
We had the pleasure suburbia of tasting La Maison suburbia Fontaine a few days before the official launch in London. Sven (yes, he is a Dane ..) and his cronies have been produced a great blanche in Pontarlier, the heart of the French absinthe country. Taste and smell is clean and fresh, dominated by the local wormwood as we know quite well. In addition, a subtle spicy sweetness that otherwise we most associate with certain Swiss absinter, delicately balanced by a dry finish.
Absinten perceived as very fresh with crisp notes of lemon, maybe lemon grass instead of lemon balm (?), Wormwood appears very clearly what so definitely pulls up. Maison la Fontaine suburbia eventually suburbia both in a low dilution approx. 1:3, and 1:5 is an excellent summer drink. Distilled suburbia spirits with wormwood, suburbia anise, fennel and a variety of other herbs. Typically, 68% alcohol, can vary from 45 to over 80 The flavor reminiscent of other aniseed drink pastis, just much more complex.
Drip ice-cold water into absinten. The slower the better. 3-5 parts water to 1 part absinthe. For a sweeter taste, you can let the water drip over a spoon with sugar. Never fire absinten, it ruins the taste.
Absinthe is white (blanching) or green (verte). Verte is dyed with herbs after distillation. There are variants with colored suburbia flowers which may be yellowish or reddish. Absinthe with bright colors are artificial and should be avoided.
Thujone is a neurotoxin found in wormwood - and other herbs, for that matter. Do not worry about thujonindholdet suburbia in your absinthe - within permitted limits may not be toxic or make you stoned.
